My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made. Most pictures are from my daughter since she takes good food pics. lol
Baked Blueberry Oatmeal Breakfast/Dessert
You will need:
2 Ramekins
1 Cup Old Fashioned Oats
1/2 Banana
1/4 Cup milk
1/2 tsp. Cinnamon
1/2 tsp. Baking powder
1/4 tsp. Baking soda
1/2 tsp. Vanilla Extract
1 Egg
7 Packets of Equal or sweetener of your choice
1/2 Cup of fresh blueberries
What to do:
Blend everything in a blender, until smooth except the blueberries.
Pour the mixture into 2 greased ramekins, mix in the blueberries into both ramekins. Bake at 350 for 15 minutes.
I didn't have 2 smaller ramekins so I baked this in one of the bigger ramekins I have and just cut it in half. Oats spike my blood sugar especially in the morning so I actually ate this as a dessert at night. For some reason it doesn't spike my blood sugar as much if I eat more carbs at night before bed. Maybe I just sleep through the shaky feeling. lol
This was good though especially if you like oats or oatmeal.
This makes two servings. Each serving is 210 Calories and 27 carbs.
It sounds very good, Mary.
ReplyDeleteThank you.
DeleteOats are very satisfying.
ReplyDeleteYes they are.
DeleteThat is so interesting about the blood sugar spikes. I’ve considered getting a continuous glucose monitor to see the difference in times of day with eating carbs.
ReplyDeleteI thought about getting one but found out my insurance would only cover it if I had type 1 diabetes. Not type 2 which is what I have.
DeleteThat looks good!
ReplyDeleteThank you.
DeleteBeautiful post
ReplyDelete:)
DeleteThanks.
DeleteThat is a good idea! It looks yummy. I had a bagel!
ReplyDeleteThank you.
DeleteThat looks good, but I personally don't like my oatmeal too sweet and would cut back on the sweetener
ReplyDeleteOh yeah, you can change it any way you want to. I like it sweeter.
DeleteThis sounds good. I really love blueberries and eat them with pancakes all the time. :D
ReplyDeleteOh I haven't had pancakes in a long time.
DeleteThey often make microwave oats too with an egg and a banana on Facebook videos. Strange that oats spike up your sugar as they help diabetes people keep their sugar levels in control, they lower sugar, but maybe yours have sugar in them or something. I use the glufree ones only and never use sugar in my house.
ReplyDeleteYeah maybe ours are different or maybe it's just me. lol
DeleteSounds pretty easy and looks great!
ReplyDeleteThank you.
DeleteThese look delicious - and easy too. I love oatmeal!:)
ReplyDeleteLooks healthy
ReplyDeleteThat looks good.
ReplyDeleteThanks.
DeleteThis baked blueberry oatmeal looks and sounds absolutely delicious! I love that it's both a healthy breakfast and a satisfying dessert option. Your tip about eating carbs at night is interesting—everyone’s body responds differently, and it’s great that you’ve found what works for you! Also, your daughter’s food photography skills must be top-notch because good food deserves to be captured beautifully. Looking forward to more of your healthy meal inspirations!
