My daughter and I are trying to eat healthier, so I am sharing some of the dishes that we are eating each week.
Baked Chicken, Sweet Potato and Black Bean bowl
We tried baked sweet potato for the first time with this dish. Neither me or my daughter liked it much. I doubt well be eating sweet potato again.
In the bowls was:
1/2 cup of Baked Chicken
1/2 cup of black beans
spinach
1/2 cup of baked sweet potato
You can use whatever seasoning you like on the chicken before baking it.
This dinner was 300 calories and 30 carbs.
Do you like sweet potato?

Black beans and sweet potato are one of my favorite combinations. I had purple ones for the first time this week. They were interesting. The Japanese sweet potatoes are my favorite though

DeleteI do like sweet potatoes once in a while. I cut them into fries and roast them like other root veggies. They're good with ranch dressing dip but terrible with ketchup.

Deletethat looks good. We eat a lot more sweet potatoes than regular potatoes (but they're actually not the same family). Butter and cinnamon helps bring out the flavor of sweet potatoes.

In the years that Weight Watchers charged points for sweet potatoes (but not winter squash, I got into he habit of subbing out butternut squash for the sweet potatoes (less sweet, but still...). DeleteI do like sweet potatoes...we mash it up with butter and a little salt and pepper...but it is a stronger flavored veggie. Did you bake all these ingredients together...or cook the chicken and potatoes separately and then add on the black beans and spinach?

DeleteLooks good and healthy. We just had some sweet potatoes cut up and roasted along with some cut up apples, cinnamon and then put walnuts on top. Sweet and tasty it was.

ReplyDeleteNo, can't stand sweet potato for some reason, just not my taste and we don't eat black bean either or any beans from a can either....We do have baked beans that come in a tin for a quick meal and have them on toast.
