Saturday Vittles

 
My daughter and I are trying to eat healthier, so I am sharing some of the dishes that we are eating each week. 

Lunch Plates

I'm not really sure what to call these plates that we've been having for lunch. We just put a little of a few different low calorie foods on a small plate for lunch. We've been switching up what foods we eat for lunch so we have a variety of things to eat. You can change it up to suit your taste.

On this plate we had for lunch was, sliced chicken breast, Veggie Straws, raspberries, baby cucumber, radishes, black olives, green olives and blueberries. 

Each plate we have been making is about 200 calories and 10 carbs. 

Would you eat this?

  2. I would definitely eat that, and do! I call it a selection, bits of this and bits of that, swapping things in and out so it never gets boring.

  4. I'd eat everything but the radishes and olives because I don't like them. You could call this a "mediterranean diet plate."

  6. It is important to eat healthy and to educate the kid to eat healthy too, that way he will develop good eating habits unlike most Americans. Radishes and spring onions are popping up here as well at our green markets as we are approaching March.

Here's what I'd call it (from Wikipedia): A charcuterie board is a platter typically made of wood or stone that features a variety of cured meats, cheeses, breads, fruits, and other accompaniments, served as an appetizer. It originated in France and has become popular for gatherings and social events.

  10. It looks delicious and nutritious. Did it fill you up? My problem with cutting back on calories is always the hunger issue.

  16. I love a platter where I don't have to cook. I do some almonds, baked tofu (I meal prep on Sundays), an apple, some beans and other veggies. I get lazy and it's great to have the break.

  17. Yum, we do a similar thing except there is a little cheese and meat (for the dog and the man) on our plate. Probably way more calories too but small plates after a workout are so refreshing.

  19. I make something similar but like to cut up some broccoli, bell peppers and other vegetables I might have on hand and roast them in the airfryer and then eat them with hummus.
