Saturday Vittles

Potato, spinach and chicken bowl

I know this bowl looks plain but I swear I added seasoning! 🤣 It just isn't showing up in my picture.

You will need:

1 chicken tenderloin-chopped (4 ounces of chicken)
1 small potato- chopped
1/2 cup fresh spinach leaves
1/2 tsp. McCormick Steak Seasoning
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. McCormick Herb and Garlic seasoning
1/2 tsp. McCormick Mesquite seasoning
Salt and pepper to taste
No calorie cooking spray

What to do:

Wash off your spinach, chop it and set aside.
Partially cook your potato in the microwave 2 minutes. Cut the potato into pieces.
Spray your pan, add chopped chicken and potato. Cook over medium heat until chicken is cooked through and potato is cooked to your liking.

Add seasoning and more no calorie cooking spray. Add the spinach and sauté until spinach is wilted. Serve while hot.

This lunch has about 200 calories and 30 carbs.
