Do you have a favorite comfort food that you go to when you're not feeling good? I do and this is it. It's actually really easy and you can add other things to it if you want to. Sometimes I'll add bacon or spinach but most times it's just this.
Recipe:
3 large potatoes
4 eggs mixed in a bowl
2 stalks of green onion-diced
3 tablespoons of vegetable oil
salt and pepper to taste
What to do
Heat skillet with oil
Wash and cut potatoes into chunks and add to pan. Fry with lid on over medium heat until tender.
Add mixed eggs and diced onion right over the potatoes and keep turning until done.
This has always been what I wanted when I wasn't feeling good or was sick. My mom used to make this for us when we were kids and it just stuck with me.

DeleteMy "comfort foods" tend to be Omelets with onions and spinach or fried rice with onions and cabbage and egg and whatever else is in the fridge

DeleteThis sounds really simple and good! I am going to give this a try soon. I love eggs, potatoes and onions, so I probably will love this as well. Sounds like a great comfort meal. How long do you have to bake the potatoes? I always cook them first before baking, but from your reicpe it soudns like just baking them would work as well.
ReplyDeleteI cut the potatoes into small chunks and I fry them for about 15 minutes with the lid on and the heat on medium.

Deleteeggs and potatoes with the add-ins totally works for comfort food. I also go for the tomato soup and grilled cheese sandwich.
