Have you ever wondered what to do with those leftover mashed potatoes? I saw this recipe on Facebook and just had to try it out and I'm glad I did because it was so good.
You'll need:
2 cups leftover mashed potatoes
1/4 cup diced bacon
1/4 cup diced green onion
Small cube of cheddar cheese for each potato ball
1 egg
1/2 cup flour
1/2 cup bread crumbs
2 eggs beaten in a bowl
Salt, pepper and garlic salt to taste
1 cup of vegetable oil
What To Do:
Mix 1 egg, mashed potatoes, bacon, green onion, salt, pepper and garlic powder in a bowl.
Put flour, bread crumbs and beaten eggs in separate bowls.
Take a small amount of the mashed potato mixture and flatten it in your hand, add a cheese cube and roll into a ball. Do that with all of the mashed potato mixture. Dip each of the potato balls into the flour first, then the beaten eggs then bread crumbs. Fry the mashed potato balls until they are golden brown and then bake them at 350 degrees for 5 minutes.
They came out really good. When you cut them open the cheese should be melted, the outside should be crispy and the inside should be soft like mashed potatoes.

DeleteThat's a great way to use leftovers, although hubby usually nabs any leftover potato for his breakfast. I'd have to fight him for them.

DeleteI don't like melted cheese, but the rest of it sounds and looks good. I hate making mashed potatoes, so I usually freeze the leftovers to used again for another meal.

DeleteOh that sounds really good! I love potatoes. I'll give this a try next time I have some leftover mashed potatoes. I wonder if it also would work to put these in the oven instead of frying?
