If you like potato dishes then this might be a good one for you. With all the potatoes and vegetables in this dish you can leave out the chicken if you want to.
You will need:
2 Large Potatoes- Cubed
3 Boneless Chicken Breasts- Cubed
3 Carrots- Cut into Bite Size Pieces
1 Cup of Mushrooms- Sliced
1 Bell Pepper- Sliced into Bite Size Pieces
1 Onion Sliced
3 Celery Stalks- Sliced into Bite Size Pieces
3 Green Onions diced
1/2 cup shredded cheddar cheese
1 Can of Tomato Sauce
3 TBSP Frank's Hot Sauce
What To Do:
Add potatoes, chicken, carrots, mushrooms, bell pepper, onion, celery, tomato sauce and hot sauce to a large pan. Mix together well, put lid on pan and put into a 375 oven for 45 minutes or until potatoes are tender.
Add cheese and green onions to top of dish and bake for an additional 5 minutes.
Ooo looks good! I bet I could do that with some of my fake chicken. Hmmmm
