You Will Need:
1 Ear of fresh corn, cooked and cut off the cob
1 tsp. Frank's Hot Sauce
2 tablespoons chopped fresh cilantro
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon salt
1 avocado, diced
What To Do:
Mix all of the ingredients in a bowl. Cover and refrigerate for at least an hour before serving.
Most of the recipes for this that I looked at called for diced tomatoes and onions and you can add that to this if you like it but the first batch I made was with tomato and onion and didn't like the taste of it together. So I changed the recipe to suit my tastes.
I've been experimenting with several 'salsa' variations to pair with chicken when I make it or to have with vegetables or even on eggs and it's been interesting trying them all out. The most interesting thing I've found out is that avocado pairs well with just about anything. lol
Have you made any salsa's like this and liked it?

The corn and avocado sound very good together. You already know what I think about that other...ingredient. lol
ReplyDeleteLOL Yes, I knew before you even said a thing.
DeleteThis sounds unique and I want to give this a try. Of course, you know I'll have to add in my fave of cayenne pepper. (lol) Hugs...
ReplyDeleteLOL Yes. I added a little heat with the hot sauce but this can be changed up to suit your own taste.
DeletePair chicken? Oh the humanity lol
ReplyDeletelol Yes, it was good with chicken.
DeleteOh Nooooooooooo~ Avocado! Blllllllllllah.
ReplyDelete*allergic...will die. haha*
Oh no. That's not good. I have a milk allergy to avocado and so does my daughter but we still eat it and just deal with the allergic reaction for an hour. lol
DeleteI would definitely love this. I've been on an avocado kick lately. So yummy!
ReplyDeleteSo have I! I bought 9 of them at the store and have been putting them in everything.
DeleteSounds good :D
ReplyDeleteThanks.
DeleteI've made a mango salsa to put on top of fish and it was really good.
ReplyDeleteThat sounds good.
DeleteIt was really good.
ReplyDeleteThat must be really good with fresh corn!
ReplyDeleteIt really is.
DeleteI have not made this, but I am a recent avocado lover, and I do believe it's good on everything! LOL Thanks for sharing. :)
ReplyDeleteI agree. It's good on everything.
DeleteCorn is one of my favorite vegetable especially during the summer. I like the addition of Frank’s Hot Sauce and I will also leave out the tomatoes and onions, I think it might over power the dish. Thanks for the great recipe Mary.
ReplyDeleteIt's so good and the fact that Ken liked it too was nice. I've made other salsas that I'll be sharing but this was a really nice one.
DeleteIt looks quite good.
ReplyDeleteThank you.
DeleteOh yum! Might just have to make this when I visit my folks b/c they're avocado lovers, too.
ReplyDeleteOh cool. I hope they like it.
DeleteI think I might be the only person in the world that doesn't like avocados. I generally like homemade tomato salsa. I can live of that stuff. There are times where I will make it and eat chips and salsa for lunch and dinner all weekend. :-)

There's a lot of people that don't like them. People make fun of Californians because they put avocado on everything.
DeleteI love avocado. It's high in fat so I limit how much of it I eat. Great recipe.
ReplyDeleteThat's very true. So many of the diabetic recipes have it as an ingredient though.
DeleteI can't have tomato or onion so your version sounds perfect (and delicious) for me.
ReplyDeleteFor What It's Worth
It was quite good.
DeleteSalsa's are great and so adaptable.
ReplyDeleteYum!
All the best Jan
I'm beginning to see that.
