You will need:
1 Avocado, Cubed
1/2 Cup of Chickpeas, rinsed and drained
1/2 Cup Diced Tomato
Small handful diced Sweet Onion
2 TBSP Diced Cilantro
2 TBSP Shredded Cheddar Cheese
1/4 Cup Spiral Pasta, cooled
Squeeze of Lemon Juice
Mix everything together and enjoy.
I've had this for lunch a few times now and it's so darn good.

DeleteI have made something similar with black beans but no pasta. My favorite is a green salad with mandarin oranges and avocado.
