You will need:
1/4 of a jicama peeled and sliced very thin
1 chayote squash peeled and sliced thin
1/2 of an avocado, diced
Add to a bowl, add dressing and mix well.
Dressing Recipe
1/2 of a ripe avocado
3 TBSP lemon juice
2 TBSP finely chopped cilantro
1 TBSP Mayonnaise
pinch of salt
2-4 TBSP water
Pinch of sesame seeds
Pinch of poppy seeds
In a small bowl combine avocado that's been chopped and use a fork to mash it really well. Add lemon juice, mayo, water, cilantro, poppy seeds, sesame seeds and salt. Add more or less water until you get the thinness you want. Mix really well and pour over slaw. Mix until slaw is thoroughly coated and refrigerate for 1 hour before serving.
The jicama and chayote squash are new to me. I love trying new things. Bet I like it too since I love the other ingredients.
ReplyDeleteThanks, Mary!
I hope you try them and like them.
DeleteI loved jicama as a produce clerk to see the people say JEE-CAMA and be wrong.
ReplyDeleteLOL! Adam, you are too funny!
DeleteOh that's funny.
DeleteI don't normally stay from squash, and I've tried jicama, but this looks and sounds pretty tasty. Thanks for reminding me I need to be eating more veggies too, Mary!(lol) Hugs...RO
ReplyDeleteI love looking up new recipes and trying them.
DeleteThis sounds different. Thanks for the recipe.
ReplyDeleteIt was different but really good.
DeleteDefinitely trying this one, I love both cilantro and avocado!
ReplyDeleteOh so do I.
DeleteI've never heard of that squash. I bought a jicama once and had trouble slicing it up. Maybe it wasn't ripe?
ReplyDeleteYou have to peel off the outer skin and it's hard to cut up. It's best when sliced super thin.
DeleteOh, I'll bet the Dad would like that one!
ReplyDeleteI hope he tries it then.
DeleteI don't know what jicama is but it looks good
ReplyDeleteJicama is a root vegetable.
DeleteI am going to have to google the jicama and chayote. I wonder what the closest I'll be able to find over here will be?
ReplyDeleteI think the closest in terms of taste would be coconut and zucchini.
DeleteI've tried jicama "tortillas" before and enjoyed, do they have it at normal grocery stores? I'm going to have to check next time I go!
ReplyDeleteNot sure, I found this at the Mexican market.
DeleteNoo idea what that is, the things I learn
ReplyDeletelol
DeleteThe only thing I've ever had in it is salt. Surprised? lol
ReplyDeleteNot surprised. lol
DeleteThe jicama and chayote squash are completely new to me. I wonder if I can even buy it in Missouri? This looks great though.
ReplyDeleteNot sue but I'm curious if it's available there.
DeleteA yummy way to use fall veggies. Looks like something both my husband and I would enjoy.
ReplyDeleteThanks.
DeleteAvocado is there so I will have it :-)
ReplyDeleteIt was so good.
DeleteSounds good. I am not familiar with that type of squash, but I love jicama.
ReplyDeleteIt's a versatile squash and I saw it in the regular market as well.
DeleteThis does sound very nice Mary.
ReplyDeleteThanks for sharing the recipe.
All the best Jan
