This week I made Enchilada Casserole. It's my moms recipe that she used to make when I was a kid. It's one of my favorite meals to make. I also make a Chicken Enchilada Casserole Recipe and this is the same recipe except with 2 lbs of hamburger instead of chicken.
It's easy to make. You will need:
2 lbs of cooked hamburger
16 corn tortillas
1 large can (28 ozs) Macayos enchilada sauce
1 lb grated cheddar cheese
2 tsp. diced green chilis
1 can whole black olives, sliced
Lay 8 corn tortillas in the bottom of a pan. Spoon over a little sauce and then a layer of the remaining ingredients. Then lay corn tortillas down on top of that and alternate layers of the rest of the ingredients.
I only use a little of the diced green chilis because they are spicy and I don't like to make it overly spicy. Add more if you like it really spicy.
Cover with foil and Bake in a 350 F oven for 45 minutes.
I always make a big pan of it because it's great as leftovers the next day for lunch.
Have you ever made anything like this?
Sounds amazing. I love everything like this, I make variations way too often lol
ReplyDeleteIt's so good and you can add so many different things to it.
DeleteI do like the sort of dishes where the left-overs are better than the original dish. Most casseroles and curries fall into that category. And my lazy self loves it.
ReplyDeleteI love casseroles. They are so good as leftovers.
DeleteSerious yum! Thanks for sharing your mom's recipe, Mary. I love that I have most ingredients in the pantry and freezer. :)
ReplyDeleteIt's so easy to make too.
DeleteLeftovers are a win as to not have to cook.
ReplyDeleteExactly and this is super easy to make.
DeleteThat looks delicious and plenty for leftovers too.
ReplyDeleteIt's really good.
DeleteThat would be a big hit here too!
ReplyDeleteI hope you get to make it one day then.
DeleteYes, I have made dishes similar to this. I usually call is Mexican lasagna.

ReplyDeleteThat sounds good too.

ReplyDeleteThanks.
DeleteI love making enchiladas. I usually make them with chicken but I will have to try this recipe soon.
ReplyDeleteThe recipe I linked is one with chicken. Those are good too.
DeleteLooks good but I am curious about low carb tortillas. How many carbs do they have?
ReplyDeletewww.thepulpitandthepen.com
The low carb corn tortillas are 12 carbs each.
DeleteI miss not having an oven to do real comfort recipes like this. It's great that you're still cooking your Mum's dish :-)
ReplyDeleteThis and the tacos I make were her recipes.
DeleteThis sounds really good! I bet my picky family would eat it so I will have to give it a try.
ReplyDeleteI hope you all like it.
DeleteLooks yummy!
ReplyDeleteThanks.
DeleteMmmm oh yes. I need to make a veggie version of this soon. That looks so good!
