This is a repost from 2016 but I've made this many times because I love this. And it's low carb which is great.
You will need
1 lb ground chicken
3 TBSP diced Cilantro
1/4 teaspoon garlic powder
2 cups grated zucchini
2 diced green onions
1/4 tsp Chili Powder
1/4 tsp Smoked Paprika
salt and pepper to taste
olive oil 2 teaspoons
Add the shredded zucchini to a cheese cloth or clean kitchen towel and twist it to remove most of the moisture from the zucchini.
Mix together all ingredients and drop by small spoonful's and flatten out into patties, into hot olive oil on pan. Fry on each side for 5 minutes. Serve with guacamole dipping sauce.
Recipe for Guacamole
2 ripe avocados
1TBSP lemon juice
1 tsp mayonnaise
salt to taste
Peel the avocados and mash them. Add lemon juice, mayo and salt. Mix well.
I love making these ahead of time and having them as a snack or lunch.

I am a vegetarian so they are not for me. They sound simple though and the mixture of flavours sounds good.

ReplyDeleteYou can go to the meat department and ask the butcher for a pound of ground chicken. He'll grind it for you.

DeleteI often make zucchini patties during summer, without the meat of course, but I do boo and spit on cilantro, as Julia CHild said when they asked her what is the best way to use cilantro: "You take it, you wash it, you throw it on the floor and step on it" LOL I would replace it with celery leaves.

DeleteI do love zucchini! But I'm with Dezzy on the cilantro. I'm in the group that it seems to taste like soap. The rest of my family loves it, so they always tell me that they're ordering real Mexican food and I can have my white girl tacos on the side LOL.
