My daughter and I are trying to eat healthier, so I am sharing some of the dishes that we are eating each week.
Baked Chicken, Asparagus and Salad
This was a very simple dinner, but it was still good.
I baked the chicken and asparagus for about an hour in a covered baking pan at 400F
Add whatever seasoning you like. I also added 1/4 cup of chicken broth so it wouldn't burn. I added some hot sauce to my chicken after it was cooked.
Then we just made a simple salad, and I found a Fat Free Ranch dressing that is only 35 Calories for 2 TBSP. My salad has lettuce, radishes, cucumbers and mushrooms. You can add whatever you like to yours.
This meal was 300 Calories and 10 grams of carbs.

DeleteI used to eat a lot of asparagus when my partner at the time loved it. I was just thinking the other day that it's been quite awhile since I've prepared any. Maybe when it's in season again and widely available in our stores, I'll get a bunch and steam them.
