Saturday Vittles

 
Banana Bread

You will need: 

Cooking spray
8 tablespoons (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
3 medium bananas, very ripe
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg

What to do: 

 Heat the oven to 350°F. Spray an 8x5-inch loaf pan with cooking spray.

Melt 8 tablespoons (1 stick) unsalted butter in the microwave. Place the melted butter and 1 cup granulated sugar in a large bowl and whisk until well combined.

Crack 2 large eggs into the bowl. Whisk until completely combined and the mixture is smooth.

Whisk 1/4 cup milk and 1 teaspoon vanilla extract into the batter.

Peel 3 very ripe, medium bananas and add them to the bowl. Using a dinner fork, mash them into the batter.

Measure 2 cups all-purpose flour, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1/4 teaspoon nutmeg and 1 teaspoon baking powder into the bowl. Switch to using a spatula and gently stir until the ingredients are just barely combined and no more dry flour is visible.

Pour the batter into the prepared loaf pan, using the spatula to scrape all the batter from the bowl.
 
Bake until the top of the cake is caramelized dark brown with some yellow interior peeking through and a toothpick inserted into the middle comes out clean, 50 to 65 minutes. Baking time will vary slightly depending on the moisture and sugar content of your bananas — start checking around 50 minutes and then every 5 minutes after.

Set the loaf, still in the pan, on a wire cooling rack. Let it cool for 20 minutes before slicing. 


This is the best banana bread recipe I've ever made and it's so easy to make. I figured I would share the banana bread recipe I made last month before I start sharing the healthy recipes again.

  10. I love banana bread although I don't make it that often. My husband has me make it with chocolate chips but I have a confession: nowadays I use a banana bread mix from Trader Joes's. Alas the nearest store is over an hour away. I need to get back to scratch. Alana ramblinwitham.blogspot.com
