Fajitas
I could eat Fajitas every day. 🤣🤣
This time we used the low carb corn tortillas.
We bought 1 Beef Skirt Steak. Cut it into thin strips, seasoned it with some steak seasoning and salt, fried it up in some no calorie cooking spray and made some sauteed bell peppers and onions.
We used canned refried beans because I didn't feel like making my own. But I did make my own Pico De Gallo and Guacamole.
Served with a little sour cream, cheddar cheese and guacamole.
This plate was about 500 calories but only 40 carbs.
Do you like Fajitas?

Looks very nice Mary and I have never had Fajitas as such.
ReplyDeleteTex Mex is a fave of mine. Looks yummy
ReplyDeleteYummy! I always use the crockpot for the meat as it makes it more tender. I tried making my own refried beans once and they turned out awful!
ReplyDeleteFajitas are a go-to choice here in Texas. I don't ever make them but when we go out to eat at a Tex-Mex restaurant, oh yeah.
ReplyDeleteLooks delicious! Have you lost weight since you started eating healthy?
ReplyDeleteI love steak fajitas too -- used to go to Chili's Restaurant all the time to have them. Haven't had one since Chili's closed years ago. I miss them!
ReplyDeleteDelicious!
ReplyDeleteDELICIOUS
ReplyDeleteI'm an absolute sucker for tex mex! I grew up in South San Antonio, where little taquerias are a staple. In fact, I had some seafood enchiladas for dinner last night!
ReplyDeleteOh you and my husband. He loves fajitas and could probably eat them everyday too!!
ReplyDeleteI did not know beef wear skirts! LOL
ReplyDeleteFajitas do not appear in my menu plans, but this looked a tasty recipe.
ReplyDeleteAll the best Jan
Yum! I really like fajitas too!
ReplyDeleteLooks very good, Mary.
ReplyDeleteWe really miss good corn tortillas. It's rare to see them here and when we do see them, they're mostly flour and aren't the same--they don't crisp up well. Your fajitas look yummy!
ReplyDeleteYes!!!! One of my faves. This looks really good.
