Eating Blood Sausage For The First Time- My Thoughts


Ever since Marianna's Mexican Market opened up right next door to where we live, we've been trying new foods found in the store. Ken said he saw blood sausage and wanted to try it. I'm not a picky eater and will try just about anything once. So we bought a small pack of it and fried it up. It was already sliced so all I had to do was fry it for 5 minutes on each side. I Googled how long to cook it in case you're wondering. In case you don't know what it is...Blood Sausage is a sausage made with pork, dried pig's blood and suet.

This was pork blood sausage. I don't know if there are other varieties but that's what this one was. When I started frying it, some of the sliced sausages kind of exploded from their outer casing and looked more like a meat crumble. So I only took a picture of the sausages that stayed together. 

I don't know what I was expecting when I took that first bite but it's very crumbly and mushy but it had a spicy meaty flavor. Mixed with the crumbly bits are also chunky, chewy bits of something. I'm guessing it was some part of the pig but who knows what parts it was. I was expecting to really hate it but it wasn't awful but because it had a slightly liver flavor to me and I don't like liver it wasn't great to me.

I would suggest taking the casing off after frying because the casing *whatever that was made from* was super chewy. 

So while it wasn't awful, the mushy texture and slight liver flavor made it so I wouldn't buy it again.

  3. I don't eat pork at all, bloody or not - so no idea about the above sausages. I trust you know what's good or not for you and your family.

  4. We have something like this called Black Pudding. It's pigs blood, meat, suet, oats, herbs/spices made into circular patties. I hate it, lol.

    You'll often find it as part of a traditional Scottish cooked breakfast alongside bacon, sausage, eggs, tattie scones, mushrooms etc.

  5. I've never tried it. I probably wouldn't buy it, but if I was somewhere where I could try it, I probably would. The casing was probably pig intestine. That is what natural casing for sausage was originally.

  11. My Irish FIL loved blood sausage. I smelled it, decided I would never eat it.

    Blood sausage is popular in British Isles, I know that. AND Iceland has their own blood sausage. I watched how they made it. Never ever.

  12. Blood sausage is not for me either. Had it a few times, didn't care for it. It didn't taste anything like iiver though. To me, liver is the worst meat I ever tasted. My parents used to make us eat it. I still can remember the taste, it's awful. :)

    1. Maybe this was a little different from what you had because it definitely had a slight liver taste to it at least to me. I've never liked liver.

  14. I like trying new things, but this would be a pass for me as I am a vegetarian.

    They don't look very appetizing. I hadn't expected it to be crumbly and mushy so that's interesting.

  15. Hard pass for me too since I don't eat meat, but Mr. Munro eats the Scottish version of this and enjoys it on a Sunday morning. The recipe must be different since his don't fall apart or crumble.

  17. I’ve heard about blood sausage, I would try it, but I’ve never had the opportunity. I love Mexican Markets, there meat section is so affordable compared to supermarkets. I love liver so I might enjoy Blood Sausage. Thank you for sharing your experience Mary :)

  20. I haven't tried it but I would probably do so if given the chance. I love that you and Ken experiment with different foods. I will try new things but my husband washes his plate off between courses like a 5 year old so he won't touch anything different.
