Recipe: Jicama and Chayote Squash Slaw with an Avocado Cilantro dressing


You will need:
1/4 of a jicama peeled and sliced very thin
1 chayote squash peeled and sliced thin
1/2 of an avocado, diced

Add to a bowl, add dressing and mix well.

Dressing Recipe
1/2 of a ripe avocado
3 TBSP lemon juice
2 TBSP finely chopped cilantro
1 TBSP Mayonnaise
pinch of salt
2-4 TBSP water
Pinch of sesame seeds
Pinch of poppy seeds

In a small bowl combine avocado that's been chopped and use a fork to mash it really well. Add lemon juice, mayo, water, cilantro, poppy seeds, sesame seeds and salt. Add more or less water until you get the thinness you want. Mix really well and pour over slaw. Mix until slaw is thoroughly coated and refrigerate for 1 hour before serving.
