Recipe: Enchilada Casserole
This week I made Enchilada Casserole. It's my moms recipe that she used to make when I was a kid. It's one of my favorite meals to make. I also make a Chicken Enchilada Casserole Recipe and this is the same recipe except with 2 lbs of hamburger instead of chicken.
It's easy to make. You will need:
2 lbs of cooked hamburger
16 corn tortillas
1 large can (28 ozs) Macayos enchilada sauce
1 lb grated cheddar cheese
2 tsp. diced green chilis
1 can whole black olives, sliced
Lay 8 corn tortillas in the bottom of a pan. Spoon over a little sauce and then a layer of the remaining ingredients. Then lay corn tortillas down on top of that and alternate layers of the rest of the ingredients.
I only use a little of the diced green chilis because they are spicy and I don't like to make it overly spicy. Add more if you like it really spicy.
Cover with foil and Bake in a 350 F oven for 45 minutes.
I always make a big pan of it because it's great as leftovers the next day for lunch.
