Recipe: Roasted Zucchini
Ever since finding out that I have diabetes, I've been trying to make more vegetables and less rice, noodles or dishes with a lot of carbs. So I've been looking into ways to cook vegetables and roasting them really seems to be my new favorite way. Now this might not seem like a big deal to you if you've been doing this for a while but it's new to me because my mom told me to just cut them and throw them in boiling water and boil the hell out of them. It also boils the taste out of them. lol
So here's my recipe for Roasted Zucchini.
1 Zucchini- cut into 1/4 slices
2 TBSP. oil
1/4 tsp. Smoked Paprika
1/4 tsp. Onion Powder
1/4 tsp. Garlic Powder
1/4 tsp. Season Salt
1/4 tsp. Thyme
Place sliced zucchini in a large bowl and add all ingredients. Toss until well coated. Place zucchini in a single layer on a foil lined baking sheet and bake at 350 degrees for 35 minutes.

This would definitely be fun to play with the different spices I have on hand and I have one last zucchini.

Adding different spices to the vegetables is what makes it interesting.

DeleteHere in the Netherlands veggies, meat and potatoes is a pretty typical meal, so most of what I knew of veggies at first was also just boiling them. I am glad I know of more ways to prepare them now. I am not a fan of zucchini, but they do sound nice. And the combination of spices sound like it gives a nice taste.

DeleteYum, this sounds good. Not as healthy, but I love slicing this or eggplant into slices, breading them, cooking in a little olive oil and topping with Italian gravy and cheese.

DeleteAnother yum! I always sauted things so roasting is actually fairly new to me too (last couple years) but I do enjoy it :) Glad your having fun with it!
ReplyDeleteMe too. I've roasted all kinds of vegetables and they've been coming out great. The carrots, cauliflower and broccoli have been the best so far though.
