Recipe: Potato, Mushroom and Broccoli Frittata


So I set out to make a Frittata but it didn't quite make it to a frittata so I'll just call this eggs and vegetables. lol 

You will need: 

3 eggs, beaten
1 small potato
2 broccoli florets, cut into pieces
3 mushrooms, sliced
2TBSP Olive oil

What to do

Peel the potato and microwave for 2 minutes. Cut into cubes and add to saute pan that you've heated the oil in. Cook for 5 minutes and add sliced mushrooms and cut broccoli. Cook until everything is tender, about 6 more minutes. 

Beat eggs in a bowl and pour over mixture in the pan. Add salt and pepper to taste. Cook until eggs are set, about 4 minutes. 

Or, if you're like me and don't like over cooked eggs on one side, you can cut the frittata eggs and vegies into 4 pieces and flip each piece over after 2 minutes or when you see the outside edges of the eggs starting to set. 

I absolutely hate over cooked eggs and you can bake this in the oven as well but the eggs get too done for me. There are any number of variations on this recipes. You can add pretty much anything you want to the eggs and I even got Ken to try this with me. This made enough for both Ken and myself. That picture I took is of the entire frittata  eggs and vegies, so half of that was enough for both of us but you can always add more vegetables and eggs to it.

  7. I'm with you on the overcooked eggs so I like your solution with the frittata recipe. It does sound like a good 'use what you've got on hand' sort of recipe, too, which I really like.
