Saturday Vittles

 
My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made.

Cucumber Sushi

What you'll need:

2 Large cucumbers
1 Cup Imitation crab or real crab
4 TBSP Salmon Cream Cheese
4 oz package of Lox (Cured Salmon)
1 Large Avocado
Salt and pepper to taste
1/2 tsp. Old Bay seasoning

What to do:
Use a large vegetable peeler to make long cucumber slices. Depending on how large your cucumbers are you will need 12-16 slices. 

Lay the cucumber slices down on a flat surface, overlapping them a bit. We used 6 slices per roll. So we made 2 rolls and cut them into pieces.  Starting at the end closest to you, add a thin layer of the salmon cream cheese and spread it all over the cucumber slices. Next lay down a thin layer of Lox just at the end closest to you. Next add a bit of the imitation crab meat or real crab meat, depending on what you like. Add a layer of thinly sliced avocado and sprinkle the seasonings on top. Next you are going to grab the end of the cucumber slices closest to you and fold them away from you, over the mixture. Then carefully roll it into a log, trying to keep it tight as you roll. Make sure it is seam side down when you cut this into "sushi" pieces. 

6 pieces of this had 12 carbs and about 300 calories. 

I don't like traditional sushi but this came out really good.

  2. That is an interesting way to do it. I like sushi but I will only eat it with cooked seafood. Raw sounds disgusting and not very safe.

  11. I am back. I am sorry. Been busy for the last two weeks. Cucumber is absolutely tremendous ingredients each time we cook at my home espeically for main dishes

  17. I never heard of using cucumber like this, what a fun way to have it look like sushi. I like cucumber, but not crab, but I am sure this would work different fillings too.

  18. I have a confession, I hate fish, especially salmon. It is so common here, like we get it every week . BUT, they look so fun!
