Recipe: Sausage and Vegetable Hash
You will need:
1 small potato, chopped
1 medium zucchini, chopped
1 carrot, chopped
1 small yellow onion, chopped
1 small bell pepper, chopped
5 mushrooms, quartered
2 links of Italian sausage
2 TBSP shredded cheddar cheese
1/2 tsp. Italian Seasoning
1/4 tsp. pepper
1/2 tsp. salt
1 TBSP butter
1 TBSP oil
What to do:
Break up the sausage into small pieces and fry until almost done, about 5 minutes. Remove sausage from pan. Add oil and chopped potato to pan. Cover and cook for 6 minutes, add carrots and cook for another 4 minutes. Add the rest of the vegetables, spices, and butter to pan. Cook for an additional 6 minutes or until all vegetables except for the potatoes are done but still crisp. Add the sausage back to the pan and cook with lid on until sausage is cooked through, about 3 minutes. Remove from heat. Sprinkle cheddar cheese on top. Enjoy!

It looks like a great meal. It's the type you eat when you're out fishing. Or when you're home and you need something that is quick and easy. Very tasty.

DeleteThis sounds like a pretty simple to make dish, with a nice mixture of veggies. And I can always replace the sausage with a vegetarian one. They sell some good vegetarian bradwursts here.
