Saturday Vittles

My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made.

One Pan Roasted Chicken and Vegies

You will need:

1/2 bell pepper- chopped
1/2 yellow onion- chopped
2 carrots- chopped
1 cup broccoli florets
1 chicken breast
1/2 tsp. Chili powder
1/2 Cumin
1/2 tsp. McCormick Mesquite seasoning
salt and pepper to taste
No calorie cooking spray

What to do:

Spray a baking sheet with No calorie cooking spray.

Add all the vegetables and chicken breast to the pan. Spray everything with more of the No calorie cooking spray. Add spices to the chicken and vegetables and bake in a 400F oven for 30 minutes.

My daughter and I halved the chicken breast because it was a big one.

This made two servings. Each serving was 300 calories and 15 carbs.

  1. Dishes that you just pop into the oven are usually the most satisfying.

  4. This is another great easy tasty recipe. It just reminds me to cook something different now and then. Sometimes I get stuck making the same thing over and over.

    1. I agree. I probably won't be making this again until next Winter now though. Too hot to have the oven on.

    1. I try to do some stir fry but I can't use oil so it's harder.
