Recipe: Vegetable Chili

You will need:

2 Tablespoons of oil
1 chopped onion
1 chopped zucchini
1 chopped green bell pepper
4 chopped carrots
1 cup of sliced mushrooms
1 tsp. Chili powder
1 tsp. Cumin
1-16oz can of Kidney Beans
1-16oz can of Black beans
1-16oz can of tomato sauce
1-16oz can of diced tomatoes

Add oil and vegetables to a large pot and saute over a medium heat with the lid on for about 10 minutes or until vegetables are tender. Add all other ingredients and simmer for 45 minutes with the lid on.

This recipe was easy and versatile because you can add or remove any vegetables you want or use other beans.

I ended up making a big pot of this and it made excellent leftovers the next day.

  3. Yum! I'm saving this recipe. We don't make chili very often, probably because I haven't found a recipe I like.

  4. Yummy! I make veggie chili but a different mix up. I don't add too many random veggies into it but might have to try that next time :)
