You Will Need:
4 Boneless Chicken Tenders- cubed
2 Medium potatoes- cubed
1/4 C. Olive Oil
1 tsp. salt
1/2 tsp. pepper
1 tsp. Garlic Powder
1 tsp. Onion Powder
1 tsp. Poultry Seasoning
1 C. shredded cheddar cheese
1/2 C. Diced Green Onion
1 Sliced Ripe Avocado
1 cup homemade salsa -recipe below
In large baking pan mix together, chicken, potatoes, oil, salt, pepper, Garlic Powder, Onion Powder and poultry seasoning. Bake for 45 minutes at 400 Degree's for 45 minutes or until cooked through and potatoes are tender.
Remove from oven and top with cheese, green onion. Bake for an additional 5 minutes or until cheese is melted. Serve with sliced avocado and homemade salsa.
Recipe for homemade Salsa
1 large tomato- diced
1/4 cup diced white onion
2 Tbsp finely diced Cilantro
1 Tbsp Lemon juice
salt to taste
Mix together and chill for 1 hour before serving.
This turned out so good. It's definitely going to be something I make more of.

DeleteThis one sounds good! I don't often bake potatoes in the oven, but I do like oven baked potatoes. I never tried homemade salsa before, so I'll have to give that a try!
