Recipe: Mary's Macaroni Salad

I make Macaroni Salad a few times a year and I usually make quite a bit because we eat it with dinner for also for a snack. But if we are having people over for dinner, this is a great side to make the day before and have it already done, plus it's super easy to make.

You'll need:

1 box of Elbow Macaroni-cooked
1 can of Black Olives-slices
2 Dill Pickled- diced
1/4 cup of Pickle Juice from the Jar of Pickles
2 Stalks of Celery- diced
1 cup of Mayonnaise
salt and pepper to taste

What To Do:

After cooking the Macaroni, let cool completely. Mix all of the ingredients together, cover and let refrigerate for at least 3 hours before serving.

This is what mine looked like when it was done. You can add anything you like to yours. I sometimes will add diced boiled eggs to it or diced ham.

Do you like Macaroni Salad? Have you ever made your own?

  1. I only make it about once a year, with yellow mustard in mine. My kids like pasta salad with Italian dressing better.

  2. I love noodle recipes, but sometimes the noodles don't come out quite as I would like. (lol) This recipe seems easy and looks delicious! Hugs...

    1. Yeah I have to keep checking the noodles as they cook so they get to the right doneness.

  4. I haven't made my own in ages- but this is a good reminder that it is fun, delicious and there is lots of room to add the ingredients in the fridge. :) Thanks!

  5. I do make a macaroni salad but it's more italian based since I don't like mayo. It is great for a meal or a snacky treat :D

  8. I like macaroni salad, but somehow it doesn't taste good the next day when I make it at home, so I don't make it very often!

  9. We're more likely to mix whatever vegetables we have with hot pasta and instead of mayo we'll add olive oil or chilli oil as a dressing. It's a quick but healthy dinner.
