Recipe: Sweet Corn Bread Muffins



3/4 c. all purpose flour
1/3 c. sugar
1/4 c. yellow corn meal
1/2 TBSP baking powder
pinch of salt
1/2 c milk
1 large egg
1/4 c. vegetable oil
1 TBSP butter

Mix all ingredients together and line muffin cups with paper liners. Fill abut 2/3 full and bake in a preheated 350 oven for 20 minutes. Makes 6 muffins.

I didn't line my muffins tin cups with paper liners because I thought if I oiled the cups they wouldn't stick. I was wrong! Use paper liners and they won't stick to the muffin tin.

  3. Whoops! I would have thought greasing the tin would do the trick, too. I do coat my greased tins with flour and don't have too much trouble getting the muffins out.
    These sound good. I haven't made corn muffins in a while. Thanks, Mary!

    1. Maybe it's because my tins are about 10 years old. Maybe I should replace them.
