Recipe: Caramelized Cauliflower & Mushrooms and Fried Eggs
For years at lunch time I would make Ken and I a sandwich. That was our go to lunch for years. A couple of years ago I found out I was Diabetic and the doc wanted me to stay away from bread, cereal, pasta, sugar...or to at least cut some carbs and sugar where I can. So I gave up eating cold cereal every morning and I've been trying other things for lunch which has been interesting. Ken still eats the sandwiches for the most part, I can't seem to bring him over to the dark side with me. Bwahahaha! *Evil cackle*
So I was looking up lunch recipes and came across a sauteed Brussels sprouts and fried eggs that I will be trying but I didn't have Brussels sprouts so I chose cauliflower and mushrooms which worked just fine in my opinion.
What you'll need:
4-5 Cauliflower Florets
2 Mushrooms
2 eggs
1TBSP Olive Oil
Salt and pepper to taste
What to do:
Add the olive oil to a pan, turn to med heat. Cut the Cauliflower florets in half and add to pan. Cook on medium heat for 5 minutes. Slice the mushrooms and add them to the pan. Cover with a lid and cook until the cauliflower florets are tender and slightly caramelized. Remove from pan and fry eggs in the same pan. I use a non stick pan so I didn't need to add more oil or butter to the pan.
I really liked it and I'll be trying it with other vegetables, especially the brussels sprouts.

Yeah I know about those pesky carbs, I miss white bread during this pregnancy

DeleteI've been trying to cut back on carbs, too, I usually eat Greek yogurt and berries for lunch.

DeletePut fried eggs on a plate and I’m one happy girl. Add caramelized cauliflower and mushrooms and I’m jumping for joy. I’m not a big sandwich person, I don’t know why but I just don’t like sandwiches.

DeleteCauliflower is fun. Veggies on the whole though, are fun for me. But I'm not a low-carber.
