Low Carb Breakfast and Lunch Ideas

 
I made me and my daughter both this for breakfast one day and we both liked it. It's 2 scrambled eggs, 2 breakfast sausages, sliced tomatoes that I threw in the frying pan and let soften, along with some sautéed mushrooms and spinach. It's very filling and low carb.

For lunch I had a spinach tossed with some lime juice and a sliced boiled egg. I made some chicken salad with a half of a left over chicken breast and sautéed mushrooms. I just added a little mayonnaise to it after chopping it small. I also had some heart of palm which you can find in a can. This was a very low carb lunch and I enjoyed it. 

Would you eat this? Have you ever tried heart of palm?

  1. Heart of palm bothers me - cutting down an entire tree for such a small mouthful. Minus the meat, your other options sound good.

  3. Mary, I appreciate you sharing these meals because I was recently diagnosed as pre diabetic. It’s frustrating because I am so thin and don’t eat much added sugar, so I’ve needed to concentrate on fewer carbs. Your meals fit the bill!

    I don’t think I’ve tried hearts of palm, unless it’s been in a restaurant meal. Does it taste like artichokes?

  6. My kind of breakfast and lunch. I've been slicing up the last of our garden tomatoes for breakfast and afternoon snack. Love the spinach and mushrooms you used, too.

  11. Looks good to me. We really enjoy hearts of palm here. We make a simple salad with hearts of palm (thin sliced), diced tomatoes and your favorite Italian salad dressing, yum.

    Not tried heart of palm but sometimes have artichokes which I believe are similar.

  15. I don't think I could digest such a big breakfast, I usually eat six kinds of seeds mixed with coconut oil and put over some rye bread for breaky.
