Saturday Vittles
My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made.
Homemade Vegetable Broth
Since I started eating low carb I've been using a lot of vegetables. So I thought I would save all the cuttings, ends and pieces that would usually get thrown away and make some homemade vegetable broth. I saved it all in freezer bags and and just added to the bags as I used the vegetables. After 2 months I had enough to make a large pot of vegetable broth.
I didn't add any salt or spices to this that way I can spice it up any way I want when I use it. The vegetable pieces that I had were carrots, onion, tomato, zucchini, asparagus, bell pepper, cilantro, broccoli, cauliflower and celery.
I added all the ends, pieces and peels from the vegetables I had saved to a pot and covered it with water. Bring it to a boil, put a cover on it and let it simmer on medium for 6 hours or until all of the vegetable ends and pieces have gotten mushy. Strain the vegetables from the broth and fill ice cube trays with the broth.
I got 24 vegetable broth cubes from this big pot of vegie pieces.
I put the vegie broth cubes in ziplock freezer bags and am storing it in the freezer. When I need some vegetable broth for a recipe I can just pop a few vegie cubes out of the bag and use it.

DeleteI buy vegetable broth because I try not to have too much in the way of gluten or meat. And chicken broth is just both. This looked good and easy. Actually I have a pot of vegetable soup cooking this morning because it's still too cold to have cold salad.

DeleteI probably wouldn't make it myself (not enough peelings-I use a lot of frozen veggies) but it's definitely a good idea. My husband used to make chicken or turkey broth and freeze it into cubes. Alana ramblinwitham.blogspot.com

DeleteMy wife makes our own broth/soup stock. (Although she freezes it in one cup containers in the freezer.) Cheaper than buying it and far healthier as we know what went into it.

DeleteVery practical. Here we do not buy broth because we have our famous seasoning Vegeta which you put a spoonful of in water and get a soup, it is salt mixed with dried and ground carrots, parsley, celery, onion. I cook everything with it.
