Recipe: Black Bean Zucchini Bake

You will need:

2 chopped zucchini
1 can of black beans
1/4 cup chopped cilantro
4 chopped green onions
1 chopped tomato
1/2 cup chopped cheddar cheese
1 Tsp. Ground Cumin
1 Tsp. Chili powder
2 Tablespoons Olive oil

What to do:

Saute chopped zucchini in olive oil until tender. Add in black beans, tomato, cilantro, green onions and spices. Cook until heated through. Place all ingredients into baking pan and stir in cheese. Bake in 350 over for 30 minutes.

I wasn't sure I was going to like this because I've never put these ingredients together in the same dish before. But it was actually really tasty. Even Ken liked it. Definitely a keeper.

  1. First I've heard of that one, hmm might scare me stomach away lol

  2. Pat- LOL It was really good. Nothing to fear.

Bijoux- It wasn't really spicy. I don't like really spicy foods and this was really good.

  3. Adam- It was. I'll be making it again this week.

  4. I am not a big fan of zucchini or black beans, so I don't think this will be a dish for me. But I am glad to hear you enjoyed this! I do love the taste of cilantro, I have powdered cilantro which I throw in lots of dishes.

  5. Lola- I love cilantro too. I add it to my homemade salsa.

  6. Love each of the ingredients. I'll have to give this a go, Mary. Thanks for sharing another tasty dish.

  7. Sophia- Thanks. I really enjoyed it.

  10. Anna- I made this again last night and it really was so good. This might be my favorite new recipe.
