Saturday Vittles



My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made.

Taco Salad

You Will Need

1 lb hamburger
1/2 Cup corn
1/2 Cup black beans
1/2 tsp. Cumin
1/2 tsp. Chili Powder
1/2 tsp. Salt
1/2 tsp. Garlic powder
Homemade salsa
1/4 Cup Pepper Jack cheese- shredded
1/4 Cup cilantro
1/4 Cup Green Onions- diced
2 Cups shredded lettuce
1/2 Cup sliced black olives


What To Do: 

Pan fry hamburger with the spices. Add beans and corn and heat through. 

Add 1/2 cup of hamburger mixture on top of 1 cup of lettuce. Top with a pinch of cheese, 2 spoonfuls of black olives, some salsa, cilantro, and green onion. 



Homemade Salsa recipe (Pico De Gallo)

I always refer to this as my homemade salsa but it's actually Pico De Gallo. I make this all the time because my daughter and I love it, it's low in calories and goes with all kinds of foods. 

4 large tomatoes diced small
1 large yellow onion diced small
One bunch of cilantro diced small (about 1 cup)
Juice from 2 lemons
Salt to taste

 Mix all ingredients together and store in a container with a lid in the refrigerator.

This taco salad has 300 calories and 20 carbs.

  1. I would happily eat it - without the mince meat since I am a vegetarian. I would replace the cilantro with something else too. I believe it is genetic but I cannot abide the taste or smell of the leaves. The seeds are fine.

  2. I love tacos. But I don't like eating the fried hard shells so having it as a salad is a much smarter idea. That really is a great recipe thanks.

  4. I just read your story about being locked in that storeroom. Crazy! I can see why it traumatized you. I think I got claustrophobia from a very similar incident.

  8. I love Pico De Gallo, but it's best made with tomatoes that have some flavor (which are hard to find in the winter).

    1. Our tomatoes were good this Winter. I think they come from warmer places nad get shipped here.

  9. I make a "taco salad", but I do it over tortilla chips. Definitely less healthy than what you did.
