Recipe: Cauliflower and Avocado Salad


I've been trying out different raw vegetable salads since I tried and liked the Broccoli Salad. So I looked in my fridge and took out a bunch of ingredients and thought this would make for an interesting cold salad. The dressing really made this taste good and I'll definitely be using it again. 

What You'll Need: 

3 large cauliflower florets, cut into bite size pieces
1 Large broccoli floret, cut into bite size pieces
1/2 Red bell pepper, chopped
2 Tomatoes, chopped
2 avocados, chopped and divided
2 TBSP Cilantro, chopped
2 TBSP Fresh lemon juice
1 Green onion, chopped
1 tsp. mayonnaise
1/4 tsp. salt


What To Do: 

Add the chopped cauliflower, broccoli, bell pepper and tomatoes into a large bowl and mix together. Add in 1 1/2 of the chopped avocados and mix together. 

In a small bowl combine 1/2 of an avocado that's been chopped and use a fork to mash it really well. Add lemon juice, mayo, green onion, cilantro, and salt. Mix really well and pour over salad. Mix until salad is thoroughly coated and refrigerate for 1 hour before serving. I added a little roasted sunflower seeds to my bowl of salad and I really liked that.

  6. I know I need to eat this, Marvelous Mary, but as you know cauliflower is not my fave. I would still have to substitute broccoli or something else, because the rest of the ingredients look pretty good. Hugs...

  8. I love avocado in a salad. Or even avocado on its own. We often just look in the fridge and pull out whatever we have to make a salad. I've never tried cauliflower raw though.

    1. I've done that too. I hadn't heard of broccoli salad or cauliflower salad until I saw a recipe for it. It's actually really good.

  19. Hmmm I do like cauliflower but I never eat it raw. I might have to try a semi-cooked version. Or even with some pasta added in. Noms! (minus the hateful herb, of course lol)
