Saturday Vittles

 

My Daughter and I are trying to eat more healthy so I thought I would share some pictures on Saturday's of what we've made.

Corn and Avocado Salsa

You will need: 

2 Ears of corn
1/2 cup Cilantro- diced
Juice from 1/2 Lemon
1 Large avocado- chopped
Salt to taste

What to do: 

Boil corn in water for 20 minutes. Remove from water and let cool. Once cool cut the corn from the cob.

In a bowl combine cilantro, salt, avocado and lemon. Mix well and add corn to the bowl. Mix well and chill. I served this with some chicken breast. 

1/2 cup of salsa contains 90 calories and 25 carbs.
