Recipe: Stuffed Zucchini


What you'll need: 

1 medium zucchini
3 large fresh mushrooms, finely chopped
1 green onion, finely chopped
2 teaspoons white onion, finely chopped
1 tablespoon butter
2 TBSP chicken or vegetable broth
salt and pepper to taste
2 teaspoons grated Cheddar cheese


What to do: 

Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. 

Add butter, diced mushrooms, white onion and green onion to saute pan. Chop zucchini pulp and add to other vegetables in saute pan. Saute vegetables for 5 minutes or until tender. Add broth, salt and pepper, simmer 3 minutes or until broth is gone.

Place zucchini shells in a saucepan and cover with water. Bring to a boil and cook for 2 minutes. Remove zucchini shells from water and fill shells with mushroom mixture. Sprinkle with cheese. Bake in a 400F oven for 10 minutes. 

 Of course if you don't like mushrooms you can pretty much add anything you want to stuff zucchini.

  1. This looks like a super simple recipe. I usually love everything with cheese on it, Mary, but as much as I know I'm supposed to eat it, zucchini is not my friend. (lol) Hugs...

  3. My middle daughter grows zucchini in our garden, so I make zucchini boats. Usually pizza inspired with sauce and cheese and toppings.

  6. I've never made anything with zucchini, but this looks simple enough to try. I'd have to leave the mushrooms out because of picky eaters, but the rest is all good. Thanks for the great recipe! #getsocial17

  9. I love zucchini but I’ve never made stuffed zucchinis. I love that this recipe is meatless, I’m sure the mushrooms add a hearty flavor. Thanks for sharing Mary.
