Favorite Picture of the Week

 

Earlier this month my daughter made ceviche. My daughter had it on tostada shells, I had mine on the side with other seafood because I try to eat low carb. (More on that tomorrow)  It was really good. Here's the recipe if you want it. Note: It's not made with raw fish because I won't eat that. But the taste is really good regardless.

Ingredients
1lb. Cooked Shrimp- diced
1lb. Imitation Crab Meat- diced
1/2 cup diced Cilantro
1/2 diced White Onion
1 diced Cucumber
2 diced Tomatoes
Lemon Juice from 2 Lemons
Tostada Shells
Salt and Pepper to taste

Preparation
Mixed all ingredients together and let sit in a container with a lid for at least an hour before serving.

  1. I could do the carbs, but shrimp doesn't agree with me. Could make it with just crabs I guess.

    This is my kind of side dish, dear friend! I love shrimp, crab and most other fish and seafood. In fact, I had salmon for dinner last evening and usually order it when we dine out at restaurants. I will share your ceviche recipe with Mrs. Shady and urge her to make some for us. This morning, she will be preparing Quiche for us.

  10. I love seafood but I don't do immitation, got to be the real thing. And although I respect your inclination to stay away frrom raw fish, when in ceviche, the citrus actually acts to "cook" the fish.

    1. Oh I know. But I had ceviche at a restaurant one time and got food poisoning and just won't take the chance of that happening again.
