Saturday Vittles
It's Pumpkin Spice season and so I'm sharing a sweet treat I made.
Cakey-Pumpkin Spice Chocolate Chip Cookies
Ingredients
Pumpkin Chocolate Chip Cookies
1 cup (room temperature) butter
1/2 cup sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
2 TBSP. Pumpkin Pie Spice
1/4 tsp. salt
2 cups (1 bag) Milk Chocolate Chips
Topping:
1/2 cup sugar
2 TBSP. Pumpkin Pie Spice
(Mix together and sprinkle over cookies before baking.)
What to do:
Preheat oven to 350 degrees Fahrenheit. Mix wet ingredients together in a medium bowl. Sift dry ingredients together, then add to wet ingredients and mix thoroughly. Fold in chocolate chips. Put mixture in the refrigerator for 15 minutes. Drop by rounded teaspoon onto greased cookie sheets. Sprinkle with sugar mixture. Bake in 350 degree oven for 10-12 minutes.
These cake-like cookies are so good, especially if you like pumpkin spice and pumpkin flavors.

Fun stuff that you have canned pumpkin over there. We do not have it processed at all here.
ReplyDeleteReally? We have to buy special baking pumpkins to use them in baking here if we want to do it ourselves.
DeleteThese will be great to make. I used pumpkin in my oatmeal raisin cookies but I never thought about mixing it with chocolate.

DeleteI love the idea of a Cakey Pumpkin Spice Chocolate Chip Cookie. Using a cup of canned pumpkin ensures that soft, moist texture, and the addition of both baking soda and powder is exactly what creates that lovely cake-like lift. The simple topping of sugar mixed with extra Pumpkin Pie Spice is a genius touch for a sweet, fragrant crust.
ReplyDeleteThis is a great recipe to try.
