Low Carb Recipe: Banana Pancakes

You will need:

1 large ripe banana
2 eggs
1/4 tsp. cinnamon
1/2 tsp. vanilla extract
butter or oil or fry the pancakes in

Mix together all ingredients until smooth. Heat a little bit of oil or butter in a nonstick pan. Pour about half a cup of mixture into a hot pan and let cook on first side before turning to cook on other side. I ate them with a little butter but you can add whatever you want to them. They were good.

Have you tried this?

  4. OH! I like this idea. I put bananas in pancakes, but you just grill bananas. I love grilled bananas (with a bit of caramel!) Yum!!
