Saturday Vittles
This week we tried something new. Delicata Squash. Neither my daughter or I have had this before so we gave it a try.
To make Delicata Squash...
Cut into 1-inch slices.
Sprinkle a little oil on each slice.
sprinkle a little nutmeg and cinnamon on each slice.
Bake in a 400 F oven for 40 minutes or until a fork pokes through easily.
We baked chicken thighs, tomatoes, green beans and carrots and the spices we like (you can use whatever spices you like) in a baking pot with a lid for 2 hours and had it all together. We eat a lot of vegetables instead of potatoes or rice these days.
The Delicata squash was really good. it's a little sweet so it paired really well with the cinnamon and nutmeg.
This meal is around 350 calories and 15 carbs.

DeleteThat does look delicious. Oh, we eat a lot of potatoes, mostly every evening meal they are included.
ReplyDeleteWe cut out potatoes, rice and noodles because of my low carb diet and my diabetes.
DeleteI've not had this squash before. we do eat Acorn squash with cinnamon and a bit of real maple syrup and I am sure if I can find this kind I will try it.

ReplyDeleteI've grown that kind of squash, but never used it in savory dishes. I don't like them! I used it in pie, muffins, cookies, just like using pumpkins (or any type of winter squash actually). I do think your rings look pretty though.

ReplyDeleteDelicata Squash is delightful and there are many ways to prepare it. I grow it in my garden (of which about 1/4 of the garden is reserved for winter squash: delicate, butternut, acorn, and spaghetti
ReplyDeleteThat's so great you tried Delicata squash! It's one of those beautiful winter squashes that doesn't get enough love. The combination of its natural sweetness with the cinnamon and nutmeg sounds absolutely perfect! And pairing it with the baked chicken and veggies makes for such a wonderfully balanced and low-carb meal. I might have to try your spice mix next time! 😋
