Saturday Vittles
My daughter and I are trying to eat healthier so I thought I would share some of what we've been eating. I've been in a casserole sort of mood lately.
Chicken and Stuffing Casserole
Ingredients
1 package (6 ounces) Stove Top chicken stuffing mix
2 cups cubed cooked chicken
2 cups fresh broccoli florets
1 can condensed cream of mushroom soup, undiluted
1/2 cup shredded cheddar cheese
(You can absolutely make your own stuffing but this was easier and I like Stove Top Stuffing mix)
Directions
Preheat oven to 350°. Prepare stuffing mix according to package directions, using only 1-1/2 cups water.
In a large bowl, combine chicken, broccoli and soup; transfer to a baking dish. Top with stuffing; sprinkle with cheese. Bake, covered, 20 minutes.
1-1/3 cups: 300 calories and 20g carbohydrates

ReplyDeleteSo do I. I like that there's always leftovers so if I don't feel like cooking the next day I can just heat some up.
DeleteClassic casserole! I crave stuffing every once in a while and yes, I usually just go the Stovetop Stuffing route too!

DeleteI only have stuffing at Thanksgiving time, but definitely go the Stove Top route.

She's not eating much so I don't know about the food triggers yet.

DeleteI love stuffing, Mary! Since my doctor told me last week that my blood sugar was high, I have been a bit nervous...but I don't eat much, most likely due to my difficulty in swallowing and the chronic cough. Hopefully the gastroenterologist will be able to figure out what is happening, and hopefully it will be something treatable.

DeleteI love casseroles! I use cream of mushroom soup and cream of chicken soup a lot for casseroles, too. My husband loves stovetop stuffing. I should try this.
