Recipe: Chickpea and Avocado Salad



You will need: 

1 Avocado, Cubed
1/2 Cup of Chickpeas, rinsed and drained
1/2 Cup Diced Tomato
Small handful diced Sweet Onion
2 TBSP Diced Cilantro
2 TBSP Shredded Cheddar Cheese
1/4 Cup Spiral Pasta, cooled
Squeeze of Lemon Juice

Mix everything together and enjoy. 

I've had this for lunch a few times now and it's so darn good.

  3. I have made something similar with black beans but no pasta. My favorite is a green salad with mandarin oranges and avocado.

  9. I love chickpeas, seriously I can’t get enough of them. I haven’t added pasta to my salad in awhile. Guess its time to change that. Thanks for the great recipe Mary :)

  11. Yum. I will try this. Great summer salad idea. Hmm, my favorite? I love to many. Lately I've craved Greek salad so that has been the one for the last few weeks. :)
