Saturday Vittles
Since it's the season of sweet treats I thought I would share one of those that I made recently.
Pumpkin Spice Cake
Ingredients
Makes about 10 servings.
1 cup vegetable oil
3 large eggs
1 (15 ounce) can pumpkin puree
1 teaspoon vanilla extract
2 ½ cups white sugar
2 ½ cups all-purpose flour-sifted
1 teaspoon baking soda
1/2 tsp. baking powder
1 teaspoon ground nutmeg
1 teaspoon ground pumpkin pie spice
3 TBSP ground cinnamon
¼ teaspoon salt
Directions
Preheat oven to 350F degrees. Grease and flour a 9x13 pan
Blend oil, beaten eggs, pumpkin and vanilla together.
Sift flour, sugar, baking soda, baking powder, ground nutmeg, ground pumpkin pie spice, ground cinnamon, and salt together. Add flour mixture to pumpkin mixture and stir until just combined. Do not over mix. Pour batter into prepared pan.
Bake in the preheated oven until a toothpick inserted in the middle comes out clean, about 45 minutes. Let cake cool in pan for 5 minutes, then turn out onto a plate. When cake is completely cooled, sprinkle with the cinnamon sugar mixture.
Cinnamon sugar mixture- Combine 1 TBSP cinnamon and 3 TBSP powdered sugar.
If you like pumpkin and cinnamon flavors, then this is a must to make. This came out so good!

I'm just dreaming of the spicy scents this is making as it bakes. I love pumpkin and spices. I use pumpkin in my oatmeal raisin cookies. This cake sounds easy. Thanks.

DeleteI used to detest pumpkin but I have grown to at least eat it (pumpkin pie, pumpkin cake, etc.) as long as it has the usual pumpkin spices. Sounds delicious. Alana ramblinwitham.blogspot.com
