Saturday Vittles

My daughter and I are trying to eat healthier, so I am sharing some of the dishes that we are eating each week.

Tilapia, Green Beans and Salad

We like seafood and found that the pre-portioned frozen Tilapia is only 100 calories for a small fillet. So that's what we used for this dinner. My daughter used some tarter sauce with hers, my plate didn't have the tarter sauce on it. You don't realize how many calories that condiments have until you start counting calories. I used no-calorie cooking spray to cook the Tilapia with. Season your fish however you like. I used Old Bay, smoked paprika, McCormick Mesquite seasoning and lemon juice.

We cheated a little bit and used canned green beans because the store I went to didn't have fresh green beans but the can of green beans was only 20 calories for 1/2 cup. sounded good to me. Then we made salad to go with it. The salad had cucumbers, sliced mushrooms, avocado, and I used my fat free Ranch that only has 35 calories for 2 TBSP serving.

This dinner was 200 calories and 10 carbs.

Do you like avocado in your salad?

  1. I don't like avocados. My favorite fish is Coho salmon, and when it shows up in the store, I buy a lot of it and then freeze it. Yum.

I can't eat fresh green beans. I never had them as a child, only canned. The fresh ones taste really weird to me and I just... can't.

Also, any kind of meat... chicken, fish, beef... my condiment of choice is ketchup. Which I *did* have a lot of as a child.

  3. Happy Valentines Day and I think this is a great meal. I like frozen or canned green beans better than fresh. I used to grow my own and liked them better after I canned them.

  4. Looks good, except for the green beans. I have an aversion to them going back to my childhood! I often buy fish from Costco these days and the filets are individually wrapped. I am sure I have salmon, flounder, cod in the freezer.

    1. My mom made great fresh green beans. I love all kinds of vegetable snow that I know how to cook them but I like canned ones sometimes too. I have a bunch of different fish in the freezer right now too.

  10. Sounds and look delicious. There is nothing wrong with canned string beans. I always rinse mine off to get as much salt of as I can. Happy Valentine's day to you too.

  15. This is a great low calorie meal, especially if you stick to lemon and don't use tarter sauce (as you did). I like portioned fish, although I am more partial to flounder (for some reason, some tilapia tastes bitter to me). The fish cooks quickly, so I use a meat thermometer to measure internal temperature.
