Saturday Vittles
My daughter and I are trying to eat healthier so I thought I would share some of the things we are eating.
Chicken, Green Beans and Sliced Almond Casserole
Ingredients
1/4 cup chopped onion
1 tablespoon butter
1 cup uncooked rice
2-1/4 cups chicken broth
3 cups cubed cooked chicken
2 cups frozen french-style green beans, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup sliced almonds
1 jar (4 ounces) diced pimientos, drained
salt and pepper to taste
1/2 teaspoon garlic powder
Directions
In a large saucepan, sauté onion in butter until tender. Add rice and broth. Bring to a boil. Reduce heat; cover and simmer until liquid is absorbed, about 20 minutes. Uncover; set aside to cool.
In a large bowl, combine chicken, green beans, soup, salt, pepper and garlic powder. Stir in rice.
Transfer to a 2-1/2-qt. baking dish. Sprinkle with diced pimentos and almonds. Cover and bake at 350° until heated through, 30-35 minutes.

Thanks.
DeleteThe almonds would give it a nice crunch!
ReplyDeleteThey did.
DeleteAnything with cream of mushroom soup reminds me of my time in the Midwest!
ReplyDeleteI love that soup.
DeleteThis sounds like a great mix. And what a way to liven up chicken too.
ReplyDeleteThank you.
Deleteyummy
ReplyDeleteThanks.
DeleteNice combination and very tasty, too.
ReplyDeleteThank you.
DeleteMy mom used to make something similar only with mushrooms as the vegetables instead of green beans, and then a fourth a cup of orange juice concentrate for flavoring. It was always so good, I loved it when she made that.
ReplyDeleteThat sounds good too.
DeleteI love any casserole recipe that includes a can of cream of mushroom soup.
ReplyDeleteI do too.
DeleteI love seeing these 'Saturday Vittles' updates. Chicken and green beans are total staples for a reason—they get the job done! I’ve actually been on a similar fitness journey over the last three months and just hit my goal, so I can tell you from experience: the healthy eating really does pay off. It’s great that you and your daughter are doing this together; having a partner makes those 'casserole cravings' a lot easier to ignore. Keep it up!
ReplyDeleteCongrats to you. Thank you.
DeleteThat sure sounds good to me! I hope you both are feeling some better.
ReplyDeleteWe're getting there.
DeleteYum! I would make it without the pimentos, though--not my thing!
ReplyDeleteYou could do that.
DeleteIt looks and sounds good, Mary.
ReplyDeleteThank you.
DeleteThat looks interesting
ReplyDeleteThanks
DeleteTake good care! I hope you are feeling better!
ReplyDeleteI'm getting there. My left arm still hurts to move it but it's getting better.
DeleteI do include chicken in my menu plans.
