Saturday Vittles

Air Fryer Chickpea Salad

You will need:

1 can of chickpeas- drained and rinsed
1 cucumber- chopped into bite size pieces
1 cup cherry tomatoes- cut in half
1 cup sliced black olives
Juice from 1 lemon
1/4 cup diced cilantro
1 avocado- chopped into bite size pieces
No calorie cooking spray
1/2 tsp. McCormick Montreal Steak seasoning
1/2 tsp. McCormick Mesquite seasoning
Satt to taste

What to do:

Add chickpeas to a large bowl. Spray the chickpeas with the cooking spray. Add the seasoning and toss. Add to air fryer basket and cook at 300F for 10-15 minutes. Remove and put in refrigerator to cool.

Add everything else to a bowl and toss with the lemon juice. When the chickpeas are cooled, add them to the bowl, toss and serve. I served this with chicken as a side dish.

  2. One of the ingredients in this recipe is avocado. I really love avocados, ma’am, especially when they’re made into fresh avocado juice or combined with sweetened condensed milk to make ice cream.

Happy weekend! Sending you a big hello from your friend in Indonesia!

  3. A colourful plate is the healthiest plate! That being said I would probably puke out the olives and cillantro, Devil's fave seasoning.
